Sugar-Free Orange Cheesecake Bites
I am sharing with you a variation on one of my favourite desserts, My Sugar-Free Orange Cheesecake Bites!
This recipe is packed with flavour to fill those sweet cravings but without the heaviness that typically comes with normal cheesecakes!
Sugar-Free Orange Cheesecake Bites
Ingredients
Instructions
- Preheat oven to 150 degrees Celsius and lightly grease six cups of a muffin tin with coconut oil. Alternatively, you can use paper liners.
- Whisk the flour, erythritol, cinnamon, and nutmeg together in a bowl. Pour in the melted coconut oil and stir until well combined.
- Divide the crust mixture evenly between the six cups. Press firmly.
- Bake for 10 minutes or until the crusts are just golden brown. Set aside to cool.
- Beat the cream cheese with an electric mixer on medium speed until smooth. Add the orange zest, erythritol, egg, vanilla extract, and salt—continue to beat until smooth.
- Evenly divide the filling between the six cups. Gently shake the pan to even out the tops.
- Bake for 18-20 minutes or until the cheesecake bites jiggle a bit but are mostly set.
- Leave the cheesecake bites to cool at room temperature for 30-45 minutes.
- Cover and chill in the refrigerator for at least 4 hours. Overnight is best.
- Enjoy!
