Recipe: Overnight Protein Oats with Peach Compote
Busy in the morning? No stress. Whip up some of these creamy high protein overnight oats. To make your tastebuds sing I’ve also put together a fresh and zesty peach compote that you can stir through your oatmeal to make it much more flavourful!

Overnight Oats
- Assemble all ingredients in a bowl and then separate into 4 jars or airtight containers and store in the fridge overnight. We will add the compote on top afterwards.
Peach Compote
- (Optional) Remove skins from peaches
- Slice and dice peaches
- Place peaches into a pot on low heat with lemon juice, erythritol, and vanilla extract. Allow to simmer and stir regularly.
- Once peaches have softened and more syrup is visible in the pot add tapioca flour to thicken mixture. Stir regularly until peaches are very soft and aromatic.
- Pour cooked peaches into an airtight container (I like to use a glass jar). Allow the jar to sit out until they are at room temperature and then store in the fridge overnight.
- Serve on top of the overnight oats.
