Don’t let those super ripe bananas sitting on your counter go to waste. Yes. I’m looking at you. Let’s turn them into an instant banana bread! This recipe is gooey and sweet and you can assemble it in about 2 minutes.

Ingredients

Instructions

  1. In a mug mash up half a very ripe banana.
  2. Mix in egg, vanilla extract, vegetable oil, buttermilk, salt and stir well.
  3. Add in flour, erythritol, cinnamon, baking powder, baking soda, and stir. Don’t overmix.
  4. Place 2 chopped pecans on top of mixture
  5. Microwave for 90-120 secs (depends on the strength of your microwave)
