Instructions

  1. Prep sauce ingredients in a bowl.
  2. Place prawns (or shrimp) into bowl with the sauce and allow to sit (place in the fridge covered).
  3. Place 1/2 tsp olive oil on a hot pan
  4. Scramble 2 eggs and then remove from the pan and keep in a bowl (covered to maintain heat). Clean the pan.
  5. Take prawns out of the fridge and add another 1/2 tsp olive oil to the pan and cook them for 2-3mins on each side.
  6. Remove prawns from the pan and put aside in another covered bowl.
  7. Place onion, capsicum, snow peas, beansprouts, salt and chilli powder into pan and allow to cook for a few minutes before adding in finely chopped zucchini. We don't want the zucchini to cook for too long as it will get soggy.
  8. After the zucchini has been added and has been able to cook for 2 mins add in the cooked prawns and egg and mix well.
  9. Serve with chopped spring onion
