Instructions
- Prep sauce ingredients in a bowl.
- Place prawns (or shrimp) into bowl with the sauce and allow to sit (place in the fridge covered).
- Place 1/2 tsp olive oil on a hot pan
- Scramble 2 eggs and then remove from the pan and keep in a bowl (covered to maintain heat). Clean the pan.
- Take prawns out of the fridge and add another 1/2 tsp olive oil to the pan and cook them for 2-3mins on each side.
- Remove prawns from the pan and put aside in another covered bowl.
- Place onion, capsicum, snow peas, beansprouts, salt and chilli powder into pan and allow to cook for a few minutes before adding in finely chopped zucchini. We don't want the zucchini to cook for too long as it will get soggy.
- After the zucchini has been added and has been able to cook for 2 mins add in the cooked prawns and egg and mix well.
- Serve with chopped spring onion
