Strawberry Sauce

Method
  1. In a circular motion chop the stem off the strawberries removing some of the white interior of the strawberry (this will make the sauce more tart if left in).
  2. Chop the strawberries in half and place in a saucepan on low heat.
  3. Add in erythritol, vanilla extract, and lemon juice.
  4. Stir regularly with a wooden spoon until the berries have melted down (approx 10 mins).
  5. Add in tapioca flour (you can also use cornstarch if you can't find tapioca flour). Allow this to cook in with the berries for a further 5 minutes.
  6. Remove from heat and place into a jar/container and allow to sit on a bench until room temperature is reached.
  7. Allow to cool in the fridge for at least 1 hour prior to serving. Keep stored int he fridge.
