Method
- In a circular motion chop the stem off the strawberries removing some of the white interior of the strawberry (this will make the sauce more tart if left in).
- Chop the strawberries in half and place in a saucepan on low heat.
- Add in erythritol, vanilla extract, and lemon juice.
- Stir regularly with a wooden spoon until the berries have melted down (approx 10 mins).
- Add in tapioca flour (you can also use cornstarch if you can't find tapioca flour). Allow this to cook in with the berries for a further 5 minutes.
- Remove from heat and place into a jar/container and allow to sit on a bench until room temperature is reached.
- Allow to cool in the fridge for at least 1 hour prior to serving. Keep stored int he fridge.
