Recipe: Zucchini Tuna Fritters

A few days ago I needed a new, small dish to add to my afternoons to help me hit my protein, but that would also give me room to have a bunch of veggies for the micronutrients and some fibre to keep me feeling satiated until my next meal. This is where this creation came in.

When cooking I recommend using an olive oil spray for your pan so that you’re not wasting your calories on unnecessary cooking fats! :)

Ingredients

  1. Grate zucchini
  2. Place zucchini on a clean cloth or some paper towel and press the moisture out (you can also do this with salt, but, I didn’t want to eat extra salt in my day, my other meals already covered that target haha)
  3. Once you’ve pressed most of the moisture out of the grated zucchini, transfer it to a bowl and add in an egg, oat flour, and 1 small tin of tuna (after draining). You can also now add in salt, pepper, or any of your other favourite spices that you think will work with the flavours.
  4. Divide the mix into 2 portions and create patties (fritters) out of them in your hand and place into a plan on a low heat. I recommend using spray olive oil on the pan rather than pouring in an oil or butter.
  5. Allow each side to cook for 3-5 mins, or until golden brown.
  6. I like to serve mine with low fat sour cream, avocado (with lemon pepper), and a side of spinach and cherry tomatoes.
