Cashew Chicken Stir Fry

Makes 1 large serving. For a lower calorie portion cut the noodle serving in half and half the stir fry sauce ingredients.

Instructions

  1. In an airtight container combine chicken with chicken marinade ingredients. Leave to sit for a few minutes (or prep this beforehand and keep in the fridge).
  2. Chop broccoli, capsicum, snow peas, and onion.
  3. Turn a skillet onto medium heat and spray add oil. Stir-fry the chicken, in 2 batches, for 2 mins or until golden brown and cooked through, transferring to a plate between batches.
  4. Combine the onion, garlic, ginger, snow peas, capsicum, chilli paste and broccoli florets in the wok or pan. Stir-fry for 4 mins or until broccoli is tender.
  5. I use pre-cooked noodles like these ones.
  6. Add chicken broth, hoisin sauce, coconut aminos, and pre-cooked noodles and cook for a further 2-3mins.
  7. Serve with green onions and cashews
