One of my favourite lunches when I’m in a calorie deficit! Heaps of protein and the fibre from all the veggies and lentils makes it super satiating.

Ingredients

Instructions

  1. Heat a large pan/skillet and add olive oil.
  2. Chop and add in chicken breast and vegetables (if they are frozen, if they are thawed add them last).
  3. Cook until chicken is almost cooked through and add in lentils.
  4. Once lentils are in the pan generously add cajun seasoning, garlic powder, and salt.
  5. All to cook through for a further 5 minutes and then pack for meal prep or serve immediately.
