Ground Beef and Sautéed Sesame Broccolini Meal Prep with Brown Rice and a Hard Boiled Egg

- Add the beef, salt, garlic, and ginger to a bowl. Use your hands or a large spoon to mix well. Cover with plastic and refrigerate.
- Bring rice and water to a boil in a medium saucepan over medium-high heat. Add salt, cover the pan, reduce the heat to low, and cook the rice for 25-30 minutes or until the rice is tender and the water is absorbed. Stir occasionally to prevent the rice from sticking to the bottom. Fluff with a fork once done.
- Meanwhile, place eggs into a saucepan and cover with an inch of cold water. Bring to a boil, then turn off the heat but keep the pan on the burner and cover. Let sit for 10 minutes.
- As the rice cooks and the eggs sit in hot water, heat a tablespoon of oil in a large skillet over medium-high heat. Add the ground beef mixture once the oil is hot and cook for 5-7 minutes or until browned. Break the beef apart with a wooden spoon and occasionally stir as it cooks.
- Pour in the beef broth, coconut aminos, and sesame oil. Stir well, bring to a simmer and simmer for 3-4 minutes or until the liquid thickens. Divide the beef between the meal prep containers and set aside.
- Wipe the skillet clean and heat the olive oil for the broccolini over medium heat. Add the broccolini followed by the garlic, water, and coconut aminos—cover and cook for 12 minutes or until tender-crisp.
- Uncover, remove from the heat and finish with a drizzle of sesame oil and a sprinkle of sesame seeds.
- Add rice and broccolini to the meal prep bowls. Refrigerate until mealtime rolls around. Enjoy with a hard boiled egg.
Notes
The meals can be refrigerated for up to 4 days.
Store hard boiled eggs unpeeled in a covered container in the refrigerator for up to a week. They’re nice snacks to have on hand, so you may want to boil a few extras.
