Instructions
- Heat a tablespoon of oil in a large pot over medium-high heat.
- Add the ground beef and break it apart with a wooden spoon.
- Season with salt and black pepper. Continue to cook for 4-5 minutes or until the beef is nicely browned.
- Transfer the beef to a bowl and set it aside.
- Add the remaining tablespoon of oil to the pot. Add the diced sweet potato and sauté for 3 minutes before adding the onion.
- Continue to sauté for another 5 minutes or until the sweet potato softens and browns.
- Add the chili pepper, garlic, ginger, cumin, and most of the roasted peanuts—Reserve some of the peanuts to use as a garnish.
- Stir in the peanut butter, followed by the tomatoes and stock. You may want to use a whisk to prevent lumps of peanut butter.
- Bring to a boil, then return the beef to the pot.
- Roughly chop the cabbage and add it in as well.
- Reduce the stew to a simmer, cover, and simmer for 20 minutes.
- Ladle into bowls, top each serving with peanuts and cilantro, then serve.
