- Pat the chicken dry and cut it into thin strips. Season with salt and black pepper.
- Bring a pot of water to a boil.
- Cook the pasta according to the packaging instructions once the water comes to a boil—about 7 minutes.
- Heat the olive oil in a medium pan over medium heat.
- Add the chicken strips and sauté for 3-4 minutes, then transfer to a plate and set them aside.
- Toss the onion and jalapeno into the pan. Sauté for 3 minutes.
- Add the garlic and sauté for 1 minute.
- Pour in the tomato sauce and broth, followed by the oregano, cayenne, a pinch of salt, and black pepper.
- Bring to a boil, reduce to a simmer, then add the chicken. Cook for 5 minutes, then stir in the lemon zest.
- Drain the pasta but reserve ¼ cup of the pasta water.
- Add the pasta to the sauce and toss to coat. Add pasta water as needed to help the sauce bind to the pasta.
- Plate and serve.
