Ingredients

  1. Pat the chicken dry and cut it into thin strips. Season with salt and black pepper.
  2. Bring a pot of water to a boil.
  3. Cook the pasta according to the packaging instructions once the water comes to a boil—about 7 minutes.
  4. Heat the olive oil in a medium pan over medium heat.
  5. Add the chicken strips and sauté for 3-4 minutes, then transfer to a plate and set them aside.
  6. Toss the onion and jalapeno into the pan. Sauté for 3 minutes.
  7. Add the garlic and sauté for 1 minute.
  8. Pour in the tomato sauce and broth, followed by the oregano, cayenne, a pinch of salt, and black pepper.
  9. Bring to a boil, reduce to a simmer, then add the chicken. Cook for 5 minutes, then stir in the lemon zest.
  10. Drain the pasta but reserve ¼ cup of the pasta water.
  11. Add the pasta to the sauce and toss to coat. Add pasta water as needed to help the sauce bind to the pasta.
  12. Plate and serve.
