Recipe: Chipotle Barramundi Meal Prep with Lemon Cilantro Cauliflower Rice

Chipotle Barramundi Meal Prep with Lemon Cilantro Cauliflower Rice

- Preheat oven to 200 degrees C and brush a baking dish with oil. As the oven heats up, pat the fish dry.
- Combine the chilli, adobo sauce, and garlic powder in a bowl. Mash with a fork to form a paste. Rub the barramundi fillets with the paste, season with salt, and place the fish into the baking dish—roast for 12 minutes.
- For the cauliflower rice, grate the florets in the food processor in batches using the grater adapter to achieve rice-like grains. You can also use a box grater.
- Heat the oil in a large skillet over medium. Sauté the garlic for a few seconds or until fragrant. Add the riced cauliflower and sauté for 5-7 minutes or until tender. Add the scallions, lemon juice, zest, salt, and black pepper, then cover the skillet during the last 3 minutes of cook time.
- Uncover the rice, remove it from the heat, then stir in the cilantro.
- Add a barramundi fillet to each meal prep container, divide the cauliflower rice between the four containers, cover, and refrigerate.

Store meals in the refrigerator for up to 4 days.
