Ingredients

Barramundi (can also use tilapia, cod, basa)
Cauliflower Rice

Instructions

  1. Preheat oven to 200 degrees C and brush a baking dish with oil. As the oven heats up, pat the fish dry.
  2. Combine the chilli, adobo sauce, and garlic powder in a bowl. Mash with a fork to form a paste. Rub the barramundi fillets with the paste, season with salt, and place the fish into the baking dish—roast for 12 minutes.
  3. For the cauliflower rice, grate the florets in the food processor in batches using the grater adapter to achieve rice-like grains. You can also use a box grater.
  4. Heat the oil in a large skillet over medium. Sauté the garlic for a few seconds or until fragrant. Add the riced cauliflower and sauté for 5-7 minutes or until tender. Add the scallions, lemon juice, zest, salt, and black pepper, then cover the skillet during the last 3 minutes of cook time.
  5. Uncover the rice, remove it from the heat, then stir in the cilantro.
  6. Add a barramundi fillet to each meal prep container, divide the cauliflower rice between the four containers, cover, and refrigerate.

Notes

Store meals in the refrigerator for up to 4 days.
