Directions
  1. Bring rice and broth to a boil in a medium saucepan over medium-high heat. Add salt, cover the pan, reduce the heat to low, and cook the rice for 25-30 minutes or until the rice is tender and the broth is absorbed. Stir occasionally to prevent the rice from sticking to the bottom.
  2. For the chicken fajita portion of the meal, preheat oven to 200 degrees C and line a baking sheet with parchment paper.
  3. Whisk the oil, salt, chilli powder, garlic powder, cumin, and oregano together. Cut the chicken into strips, then toss the chicken in half of the oil mixture. Toss the bell peppers and onion in the remaining oil mixture.
  4. Place the chicken on one side of the baking sheet and the peppers and onion on the other. Arrange in even layers and cook for 30 minutes. Stir halfway through cook time.
  5. Stir the chilli powder, black pepper, lime juice, and zest into the rice once done—fluff rice with a fork.
  6. Divide the rice between the meal prep containers, top with the chicken fajita mixture, cover, and refrigerate.

Notes

Store meals in the refrigerator for 4-5 days.
